Southern Cross farm, Boulter’s jewel changing lives

ADORED and revered by his employees at his Southern Cross farm, business mogul Harvey Boulter says the farm was established to offer employment and essential life skills to people in the Kamanjab area.

Part of the skills Boulter has imparted on his farm employees is humility and dignity, which are exemplified by the journey his personal chef, Raymond Thourob, has travelled since 2019 when he began working at the farm.

Thourob (36) had to endure a torrid period under the management of former farm managers, Alta and Gerhard van Wyk (Snr) (former South African National Defence Forces), who, in 2020, became annoyed that Thourob was getting too close to Boulter.

With such anomosity and infighting among his employees, Boulter had to take Thourob under his wing and teach him how to diffuse difficult situations.

“Alta became annoyed in 2020 when our chef Thourob took directions from me for the daily menus (which were largely for me). Together with Thourob, we would agree on recipes from challenging cookbooks collected from different restaurants worldwide, which would challenge his cooking skills.

“This was a process we both liked and we would sometimes spend hours discussing and refining recipes,” Boulter said.

Subsequently, Boulter says he ultimately began coaching Thourob, not for his amazing chef abilities but to become a better person by always taking the high ground.

  “Alta would frequently try to set him up for failure, such as making chicken for an evening meal but only giving him the frozen chicken an hour before Thourob was to serve it. She realised that meant he couldn’t marinade it or even have the time to prepare it properly.

“He wasn’t always provided with the type of chicken he needed; for example, he might make chicken cordon bleu, and she’d give him thighs. It was deliberate, and we were all aware of it. In essence, it was also expected, as these types of games are common in Namibia with some management, and we would treat it as on-the-job training,” the business mogul said.

According to Boulter, he had to train Thourob to ask for what he needed while remaining calm in the face of the unfolding games. 

“I reminded him that individuals win wars by maintaining the moral high ground. I told him to utilise these instances to learn how to maintain that high ground rather than dropping to lower-ground techniques like shouting and name-calling.

While frustrated at first, he understood that the plan worked, and he felt better as a result. He stopped feeling like a failure and grew stronger within.
